What Is Longhorn Beef?

A different kind of beef

Texas Longhorn beef comes from one of the most historically significant and iconic cattle breeds in North America. Unlike modern commercial breeds bred primarily for rapid weight gain and fat marbling, Longhorns are a heritage breed shaped by centuries of natural selection.

The result is a naturally lean, highly muscular animal that produces beef with a distinct flavour profile — clean, rich, and satisfying — without the heavy fat associated with feedlot beef.

At Crooked Horn Ranch, we raise our Longhorns the way this breed was meant to live: on open pasture, with low stress handling, and no shortcuts.

Why Longhorn is Different

Not your average beef

Most beef you buy at the grocery store comes from breeds like Angus or Hereford, crossed with Continental breeds and finished on grain to maximize fat marbling and weight gain. While this produces tender beef, it comes with a higher fat content and a less complex flavour.

Longhorn beef is leaner by nature — but that doesn't mean it's tough or bland. When raised right and finished on grass, Longhorn beef is incredibly tender and carries a depth of flavour that's hard to find in commercial cuts.

Think of it as beef the way it used to taste — before industrial farming changed everything.

History

The Origin of the Longhorn

The Texas Longhorn descends from cattle brought to the Americas by Spanish explorers in the late 1400s — some of the first cattle ever to set foot on North American soil. Over centuries, these cattle adapted to the harsh conditions of the American Southwest, developing their iconic long horns, exceptional hardiness, and lean, muscular builds.

By the 1800s, the Longhorn became the backbone of the American cattle industry. Massive trail drives pushed millions of Longhorns north from Texas to feed a growing nation. They were the original range cattle — tough, self-sufficient, and perfectly suited to open land.

As the cattle industry industrialized in the late 1800s and early 1900s, the Longhorn was largely displaced by faster-growing, heavier breeds. By the 1920s, the Texas Longhorn was nearly extinct.

A small group of preservationists saved the breed, and today, the Texas Longhorn is experiencing a well-deserved comeback — especially among small, sustainable ranchers who value the breed's efficiency, hardiness, and the exceptional quality of the beef it produces.
